In hot and humid summer in Japan, we enjoy this salad with cucumber which is abandoned during ghee summer. You can make it in the morning for evening meal.

Ingredients

Hands on time 15 minutes or less
2 people as a side dish
  1. 200 gor 1/3 of cucumber
  2. 1 TBspnsesame oil
  3. 1/2 TBspnrice vinegar
  4. 1tspn light soy sauce
  5. 1/2tspn sugar
  6. 1/2tspn salt to withdraw water from cucumber
  7. 1/2 TBspnsesame seeds

Cooking Instructions

Hands on time 15 minutes or less
  1. 1

    Dry roast the sesame seeds. (= put the sesame seeds into a very hot pan WITH A LID. Take off the heat when the seeds starts to pop and keep moving the pan around)

    Bash the cucumber with the blade of knife, sprinkle some salt and roll over
    chopping board pushing down cucumber hard. Leave for 10 minutes or so.

    Mix sesame oil, vinegar, soy sauce, sugar and salt if using.

  4. 4

    Squeeze cucumber, roughly cut and add them into the dressing.

  5. 5

    Transfer to refrigerator for 15 minutes or until serving.
    Grind sesame seeds and sprinkle on cucumber.
