Cucumber & Avocado Yoghurt Salad

One day I added fresh Cucumber and Avocado to leftover Tzatziki (Yoghurt & Cucumber Dip), and that was the beginning of this salad. You don’t need Tzatziki. You need the same ingredients to make Tzatziki, and combine them in a different way. This salad is absolutely quick and easy to make. I recommend to cut Cucumber into chunky bite-size pieces, so that water won’t come out too quickly. This is a perfect salad for BBQ.

Ingredients

  1. 1large Continental Cucumber *about 250g
  2. 1 pinch(OR 1/8 teaspoon) Salt
  3. 1Avocado *cut into bite-size pieces
  4. Yoghurt Sauce
  5. 1/2 cupUnsweetened Greek Yoghurt
  6. 1/4 teaspoonSalt
  7. 1/4 teaspoonSugar
  8. 1 cloveGarlic *grated
  9. 1 tablespoonOlive Oil
  10. 1-2 tablespoonsDill OR Mint *coarsely chopped
  11. Black Pepper

Cooking Instructions

    Cut Cucumber chunky bite-size pieces, add Salt and combine, and set aside while you are making Yoghurt Sauce.

    Combine all the Yoghurt Sauce ingredients in a small bowl.

  3. 3

    Discard salty water from Cucumber if there is any. Add the sauce and Avocado to Cucumber, gently mix to combine, and serve immediately. *Note: I added extra Black Pepper and some Dill leaves on top.
