Healthy Yogurt Potato Salad in 5 Minutes

I came up with this recipe when I was trying to think of what to do with my leftover yogurt.

Keep an eye on the potatoes while cooking and adjust the cooking time accordingly.
I recommend dill for a herb but you can use any other herbs you like such as oregano, basil or thyme. Recipe by Vegimaya

Ingredients

  1. 4Potatoes
  2. A
  3. 100 gramsPlain yogurt (non-fat, low-fat or anything you like)
  4. 1Garlic powder
  5. 1Salt and pepper
  6. 1Dill (or any herb you like)

Cooking Instructions

  1. 1

    Slice peeled potatoes into quarter-rounds and place them on a heat proof dish. Microwave it for 3-4 minutes.

  2. 2

    Add the A ingredients and combine with the potatoes from Step 1.

  3. 3

    Garnish with pink peppercorns on top and it's done!
