Ingredients

  1. 2 tblsVeg Oil
  2. 2 lbBeef cut into 1inch pieces
  3. 2 TblsAll purpose Flour
  4. 3/4 tspSalt
  5. 1/8 tspPepper
  6. 1Medium Onion
  7. 1 tblsground Cumin
  8. 1/2 tspground Cinnamon
  9. 1/4 tspground Cloves
  10. 1 CanBeef Broth
  11. 1/2 cuppineapples
  12. 3 Cupsbaby Spinach
  13. 3/4 pintBeef stock
  14. 2Carrots chopped
  15. dumpling mix
  16. 50 gSuet
  17. 100 gAll purpose Flour
  18. 75 mlswater
  19. 1dried beef cube crumbled in
  20. PinchSalt

Cooking Instructions

    Mix the Dumpling mixture in a bowl and you should get 8 small dumplings as they expand in the stew. Add them to the stew for the last 20 minutes of the stew.

    In a large pan add the veg oil on high heat then down to medium

    Add the Beef to a bowl of flour and coat all over

  5. 5

    Add half of the beef to the oil and fry on all sides for about 4 minutes

  6. 6

    Take the beef out and set aside on a plate and do the same again with the other half.

    Take out the other half and add to the first half of beef.

    Add the chopped onions to the same pan (you may need a little more veg oil) fry turning them for 2 minutes on medium heat

    Sprinkle cumin,cinnamon and crushed Cloves and mix in and cook for 1 minute. Then add the beef and mix

    Add the broth and the beef stock and bring to the boil.add the carrots and Turn down and the Spinach and stir. Then add the lot to an oven proof dish with a lid and cook on 170 for 2 hours.

    20 minute near the end add the Dumplings and pineapple stir in and cook for 20 minutes.

    Serve with Mashed Potatoe of french fries. Or in a bowl with crusty bread.

It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
