Vegetarian Dumpling Stew
This stew is perfect for a light lunch or dinner
Cooking Instructions

Heat some oil in a pot over medium high heat. Add the shallot. Fry for a minute then add garlic. After about 30 sec add peas

Next, add tomato passata and some water (between 1 and 2 cups) with a crumbled stock cube. Bring to a boil

Season with salt, pepper, sugar and cayenne.

Combine all the dumpling ingredients. Add one teaspoon worth of mixture in the boiling soup. Cover for 1 minute

When dumplings are cooked, serve. Enjoy :)

Dug in the freezers and found frozen partial bags of peas and corn lol par for the course with me. I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. .
