Persian rosette cookies (Noon Panjereh)

According to Wikipedia rosette cookie is Scandinavian cookie. Rosette cookie is popular and traditional cookie in many countries such as Norway, Finland, Ukraine, Mexico, India, Iran, Turkey, Columbia..... In Scandinavian countries it might be served at Christmas.
One of the traditional Iranian cookies that is very similar to Rosette cookies , is called ‘ Naan or Noon Panjereh نون پنجره ’. Panjereh پنجره means window in Farsi but I do not know why it’s called naan panjereh.
These delicious and delicate cookies are deep fried and similar to Funnel cake. They are sweet, light and crispy treat.

I was given a container of coconut oil and really was not sure what to try it in first. Cookies seemed a natural choice for the flavor, adding some coconut flakes and mini chocolate chips. The coconut flavor is mild and delicate, the cookie soft and slightly chewy in the middle with slightly crisp edges. Compared to a cookie with butter, they are lighter in color and have a softer texture and delicious delicate coconut flavor.. fenway -

Casoy Cookies (egg-free) Casoy Cookies (egg-free)
Cashew nuts are one of my top nutty-favourites. If you’re into shortbreads then you’ll definitely adore this cookie. Casoy cookies’ texture is quite similar to shortbreads and has a toasty-nutty-buttery after-taste, too. They’re awesome quick and easy m-to-make snacks, super yummy especially with any kinds of coffee - rain or shine! Enjoy! 🤎🤍 LizzieVO -
