A vegetarian Indian snack, often served as a side dish to curries

Ingredients

  1. 1 1/2onions (sliced into rings)
  2. 1large free-range egg
  3. 60 grams (2 ounces)plain flour
  4. 1/2 tspground coriander
  5. 1/2 tspcumin seeds
  6. 3 tbspvegetable oil, plus extra if required

Cooking Instructions

    Beat the eggs in a bowl, add the onion rings, and mix well

  2. 2

    Mix in the flour, ground coriander, and cumin seeds. Ensure you have a nice thick, but smooth batter, before cooking

  3. 3

    Heat the oil to a medium heat in a deep-sided frying pan or wok. When hot add a generous dollop of the bhaji mixture and fry for 30-45 seconds, until golden-brown

    Turn, and fry for a further 30 seconds. Keep turning and frying until crisp and golden-brown all over. Remove from pan, and drain on kitchen paper

    Repeat with the remaining bhaji mixture. Add extra oil to the pan if it runs low. Bring the pan back up to heat before adding any more mixture. Drain on kitchen paper, then serve...

I'm a designer/artist and I learned to cook when I started making my own Chinese food over 30 years ago. I'm a lover of my native British food, but recently I've developed a taste for American comfort food, especially sandwiches and BBQ (watching too much 'Diners, Drive-Ins, and Dives' probably). 😸 Unfortunately, we don't have any independent US-style diners or drive-ins in my neck of the woods, so I had to learn from recipe books and the Food Network. I'll also be publishing some traditional UK classics in case any non-Brits want to have a crack at Brit grub.
