Firstly we will assemble all the required ingredients.

Now in a thick bottom pan heat coconut oil on medium flame and add cumin seeds.

When cumin seeds start to splutter add bay leaves and cinnamon sticks.

After 2 minutes when you start getting nice aroma of cinnamon add curry leaves, green chillies & the chopped ginger pieces and saute for 2 minutes.

Now it's time to add the onions and continue to saute on medium flame until the onions turn nice pink.

When onion is ready add the cubed pieces of boiled potatoes and continue to saute on low flame.

Now add milk into it and boil the mixture for 2-3 minutes.

Once the milk reduced by 25%, mix in the coconut milk along with salt and pepper. Again cook for 2-3 minutes.

Finally our traditional kerala style Potato stew is ready, garnish with coriander leaves and serve hot.
