You know the score. U try and grow a few courgettes and before u know it they’re coming out of ur ears, ur nose and everywhere else. So here’s something easy and tasty to use them up. Glut Carpaccio.

You know the score. U try and grow a few courgettes and before u know it they’re coming out of ur ears, ur nose and everywhere else. So here’s something easy and tasty to use them up. Glut Carpaccio.
Steps

Grab ur courgettes and use a peeler to cut them into thin ribbons

Toast up ur almonds and chop em into small chunks
- 3
Grab some mint from your extensive and well maintained herb garden (here I’ve used Tashkent mint and Black mint cos it’s well delicious yeah?) Chop it up too

Chuck the mint, almonds, grated pecorino, olive oil, salt and pepper and the juice and zest of half a lemon on top of ur courgettes. Then toss it up. voila, as they say in Italy.
