My take on tasty vegetarian India Dish (dry curry)

Please Note - When I cook I do not measure my Ingredients or spices but mainly go on what smells and taste good so please feel free to add and change things to your personal liking.

Start by cooking potatoes and cauliflower until soft and then set aside cauliflower. Next fry potatoes (chop into pieces) in a pan with oil until they are golden brown. Place potatoes on paper to remove excess oil.

While your pan is still hot add crushed garlic and fry for a couple of minutes then add crushed coriander seeds, cumin seeds, garam masala and turmeric. After cooking these Ingredients together for awhile add very finely chopped onion and cook until onions are almost caramelized.

Add your chopped tomato and cook for a few more minutes. Now you can mix your tomato puree with a little bit of water (not too much just until tomato Puree becomes runny) then add to your pan.

Now add your potatoes and cauliflower along with finely chopped coriander. Add chilli flakes if desired and a good amount of salt and pepper.

Serve Hot and Garnish with chopped Coriander. This dish is great as a side dish, eaten with chapatis or rice. Aloo - potato Gobi - Cauliflower
