Szchewan chicken

It is the easiest way of preparing Szchewan chicken. I have used Ching's ready-made Szchewan chutney to prepare this dish. Have it with fried rice in a weekend afternoon.

Marinate the chicken with black pepper, vinegar, egg, half of the ginger paste, salt and some cornflour.

Heat some oil in the pan, and fry the chicken pieces in batches.

Once deep fried, remove them from the flame.

In the same pan, add some more oil if required.

Add the minced garlic and dry red chillies and saute them till the aroma comes out.

Add the capsicum and onion. Add some salt for the veggies. Fry them for a while till it becomes soft.

Add the szchewan sauce, soya sauce and tomato ketchup.

Mix them well and add the fried chicken pieces. Saute them altogether.

Add some water for the gravy and bring them to oil.

Check the salt before adding for the gravy as the sauce already have some salt.

If required add some salt and mix them well.

In a bowl mix 1 teaspoon of cornflour with water and add it in the pan. It will keep a thick consistency in the gravy.

If you want it to be more spicy, you may add some black pepper in the gravy as well.

Remove it from the flame. Serve hot.
