Zest and juice 3 lemons, crush 1/2 pack of ginger nut biscuits and weigh 200g of sugar

Heat small pan add all the sugar and add double cream a bit at a time continuously stirring until all cream added and all the sugar has dissolved turn off heat but continue stirring leave to one side

Add crushed biscuits to bottom of 8 ramekins or glasses and leave to the side (if any left can add to top of possett)

Add lemon zest and juice and stir then pour mixture beween 8 ramekins or glasses and leave to the side to finish cooling

Cut your fruit to whatever shape you want and add to the top of the possett and add sprinkle of crushed ginger nut biscuits if required put in the fridge to set for at least 2-3 hours
