Cooking Instructions

Prepare the ingredients. Rinse and separate the rice noodles (bean thread noodles) so they don’t stick together.

Bring about 4 1/4 cups water (about 1000 ml) to a boil. Turn off the heat. Add the winter melon tea block and let it soak, stirring to dissolve. Adjust the sweetness by how long you let it steep—the longer, the sweeter. You can make it sweeter at first, then dilute with more water after cooking. If you make it too light at the start, it may lose its sweetness after cooking. Remove the winter melon block, place it in a bowl to cool, cover with plastic wrap, and refrigerate for later use.

Over medium heat, once the winter melon block is dissolved, add the desired amount of rice noodles (bean thread noodles).

If you like, you can enjoy this drink hot—the noodles will be soft and chewy. For a colder, lighter version, add some ice cubes!

Once cooked, the noodles will turn translucent. After cooling, refrigerate—the noodles will become opaque and chewy. Taste for sweetness at the end and add more water if you want a lighter flavor.
