  2. 1500 grChilean Seabass
  3. 5000 mlWater
  4. 100 grSalt
  5. Spicy Miso
  6. 30 grGochujang
  7. 300 grDen Miso
  8. 15 grKorean Chili Flakes
  9. 80 grRed Chili
  10. Condiments
  11. 20 grBlack Sesame Seeds
  12. 50 grChopped Spring Onion
  13. 100 grRed Chili Pickles
  14. 10 pcsMagnolia leaves

Steps

  1. 1

    Brine Chilean Seabass for 1 Hour

  2. 2

    Blend den miso, red chili, gochujang and korean chili flakes in termomix until smooth

  3. 3

    Remove chilean seabass from the brine and marinate with spicy miso overnight

  4. 4

    Grill chilean seabass over the charcoal

  5. 5

    Serve chilean seabass on top of magnolia leaf with spicy miso sauce, black sesame seeds, spring onion and red chili pickles
