Onion Tomato Podi Uttapam !

This is an all time favourite recipe of mine.Here you can add any other vegetable also along with the onion & tomato,and make an interesting uttapam of your choice.
The Podi adds a crunch and extra spice to this Uttapam. It is better to use the Dosa batter when it is nicely fermented,which means after the first day of using the batter,the leftover Idli/Dosa batter can be utilised like this.

Ingredients

2 servings
  • 2 cupsDosa batter
  • 2finely chopped onion
  • 1finely chopped tomato
  • 2green chillies finely chopped
  • As requiredCoriander leaves for garnish
  • 2 tbspmolgapodi/dosa podi powder (a dry chutney powder)
  • 1-2 tsp Ghee
  • 2 tbspOil
  • To tastesalt
  • As requiredWater

Steps

  1. 1

    In a big bowl put the Dosa batter and salt,mix well and bring to required consistency.The batter should be not very thick nor it should be very watery.

    Then add green chilli,little chopped tomatoes, onion and coriander leaves & mix again.

  3. 3

    Then heat a non stick tawa

  4. 4

    When nice and hot pour a laddle full of the Uttapam batter and spread the batter to form a thick circle shaped Uttapam.

  5. 5

    Sprinkle on the Uttapam a few pieces of the chopped tomatoes,onion and coriander leaves.

  6. 6

    Then sprinkle some dry malgapodi powder on the Uttapam and drizzle oil and little ghee on the Uttapam and cook it covered with a lid.

  7. 7

    Then flip the Uttapam.Drizzle a few drops of oil on this side also.When done,remove it from the tawa and turn off the gas.

  8. 8

    Serve hot with chutneys of your choice, sambhar etc or can be eaten just like that,plain without any accompaniments.
