Ingredients

  • 3brinjal washed and slit through the centre
  • 1large onion finely chopped
  • 2garlic cloves finely chopped
  • 1green chilli finely chopped
  • Handfulcoriander chopped
  • to tasteSalt and Pepper
  • Handfulcrushed peanuts
  • 1 tbspolive oil
  • Aluminium foil for wrapping

Steps

  1. 1

    Mix together onions, chillies, garlic, coriander, salt, pepper and peanuts

  2. 2

    Put mixture in the slit brinjal, drizzle olive oil, wrap tightly in foil and bake in oven @350 degrees celsius for 45-50 minutes

    Let it cool, open foil, serve as is, or mash to a coarse paste, drizzle lemon juice and olive oil and serve with flat breads or nachos
