Panjiri is an excellent winter treat prepared in khalis ghee , semolina and nuts.
My family’s favourite that has been passed down from generations to generations . My grandma prepared this panjiri for my mom and all phophos and then my mom prepared for we sisters and my all bhabhis.

Ingredients

1&1/2 hour
10 servings
  • 2 cupsSooji
  • 1&1/2 cup jagerri (gurr)or sugar / brown sugar powder
  • 1&1/2 cup Desi ghee
  • 1 tspelaichi powder
  • Nuts:
  • 1 cupAlmonds
  • 1 cuppistachios
  • 1 cupgoondh (edible gum crystals)
  • 1 cupcoconut (flakes and thin slices)
  • 2 cupsphool makhane
  • 1/2 cupraisins (optional)
  • 1 cupchar maghaz
  • 1 cupcashews

Steps

  1. 1

    Begin your steps by cleaning all nuts.

    Take 2-3 tbsp khalis ghee in a pan and fry phool makhanay light brown on medium flame. Be careful not to burn them.

    All steps need patience and on a low to medium flame.

    Remove from ghee and keep aside.

    Now add goondh in same ghee and slowly cook it. Be patient.

    This process needs patience and goondh slowly puff up in the ghee.

    When the cracking stops it means it is done.

    Remove from the ghee and let it cool then grind coarsely.

    Almonds, cashews, pistachios

    Coconut chopped

    Roast all the nuts on low flame for a minute.

    Roast coconut slices or cut as you like and add char maghaaz (melon seeds)and keep aside. Fry raisins in a little ghee for a minute,

    Add sooji with ghee and stir continuously till it's colour changes. This process take at least 40-45 minutes. Add elaichi powder at this stage. Soji colour changes to little dark with good aroma.

    Coarsely grind all nuts & mix all nuts, char maghaz, goondh.

    Mix sooji in nuts mixture. Let this cool down to room temperature.

    Now Add gurr or sugar. Mix well.

    Add coconut and mix well and adjust sweetness according to your taste.

    When completely cooled then stored in airtight glass jars.

I am a homechef. Cooking is my passion. Love to creat new recipes. Mother of three . MashaAllahI belong to a punjabi family and married in the same community. Food taste is similar and almost same traditional dishes. My Ancestors belong to Amratsar and Inlaws are from Sargodha. I am born & brought up in Karachi. I have learnt alot from my Mom . She’s also a super chef of our family & my inspiration too. After shadi have learnt few dishes from my saas too .Good food makes my family really happy & in return they appreciated me alot. It’s really good to see my husband and kids happy because they love the food that I cook . I genuinely enjoy the whole process of cooking & love to hosting and design menus too. For me cooking is highly creative hobby to take up . You can not only create your own dishes but blend your favourite cuisine , it’s totally your choice because it’s your kitchen and your family. I am blessed to be surrounded by beautiful family who always appreciated me and love my cooking skills ❤️❤️❤️
