Preheat oven to 350. Place bacon in a 10x15inch rimmed baking sheet lined with tin foil. Bake until bacon is crispy, 25 to 30 minutes. Roughly chop and set aside. Reserve drippings in pan.

Increase oven temperature to 425. Cook pasta to al dente. Drain, reserving 1/2 cup pasta water. Return hot pasta to pot. Add spinach and pasta water and stir until wilted.1 to 2 minutes. Add Alfredo sauce, tomatoes, mustard, lemon and chopped bacon. Stir to combine.

Spread pasta mixture in even layer in drippings in baking sheet. Sprinkle with cheese. Bake at 425 about 15 minutes. Garnish with parsley.
