Fufú is a traditional dish from Latin America, especially from countries in the Caribbean basin. It’s made with green or ripe plantains that are boiled, mashed, and mixed with animal fat, meat, or vegetables.
Steps
- 1
Boil the plantains in plenty of salted water with the lemon juice.
- 2
In a skillet, sauté the garlic in olive oil, then add the peeled, boiled plantains. Mash into a purée and set aside.
- 3
Season the steak and sear it on both sides on a grill for 8 minutes. Finish cooking in the oven to your preferred doneness.
- 4
Wash and peel the potato. Slice it very thinly and fry in plenty of oil. Remove and drain on paper towels. Season with salt.
- 5
For the wine reduction: In a skillet, pour in the wine, balsamic vinegar, and brown sugar. Stir and let reduce over medium heat. At the end, add the cornstarch dissolved in water to thicken. Brush the steak with the reduction.
- 6
Serve the steak with the plantain fufú and fried potatoes. Enjoy!
