Heat 1/2 tablespoon oil in a skillet over medium heat. Add the roughly chopped onions and sauté until they turn light pink.

Add the garlic cloves, ginger, and grated dried coconut. Sauté until golden brown, then turn off the heat.

Let the mixture cool slightly, then transfer to a blender jar. Add as little water as possible and blend to a smooth paste.

Heat 1 to 1 1/2 tablespoons oil in the skillet. Add the ground paste and sauté lightly.

Add the tomato puree and mix well. Then add turmeric powder, red chili powder, coriander powder, and garam masala. Mix thoroughly.

Cook the masala on low heat until the oil separates from the spices.

Add water as needed, then add salt to taste. Mix well, cover, and cook for 7-8 minutes.

To make the omelette, crack the eggs into a bowl. Add the chopped onion, green chilies, cilantro, a pinch of turmeric powder, and salt to taste. Beat well.

Heat oil in a pan. Pour in the omelette mixture and cook on both sides until golden brown.

Remove the cooked omelette to a plate and cut into square pieces.

Uncover the curry, add the omelette pieces and chopped cilantro, and mix. Bring to a boil, then turn off the heat.

Transfer to a serving bowl, garnish with cilantro, and serve hot with roti, bhakri, or steamed rice.
