To make your castagnaccio, add 2 1/2 cups chestnut flour (300 grams), 1/3 cup pine nuts (50 grams), and 1/3 cup raisins (50 grams), previously soaked in water and drained, to a bowl.

Stir the ingredients with a spoon, then add 4 tablespoons extra virgin olive oil and enough water to form a smooth, even batter.

You can add more mixed nuts, chocolate chips, or brown sugar to sweeten, but keep in mind that both chestnut flour and raisins are already quite sweet.

Bake the castagnaccio in the oven at 350°F (180°C) for 40 minutes.
