    Slice the leeks into rings and cook them in a pan over medium heat for 5 minutes until they are golden brown.

    Then add a ladle of water and cook for another 10 minutes until they are softened.

    Crack the eggs and pour them into the pan, stirring gently over low heat until they thicken but remain creamy. The secret is to keep stirring continuously to prevent sticking or burning. Remove from heat and salt to taste.
