Soak chana dal in warm water for 30 minutes. Roast Bengal gram and urad dal separately till golden. Then grind in a mixer grinder and make powder. Mix rice flour with Bengal gram and urad dal powder. Add salt, red chilli powder, asafoetida, chopped curry leaves, soaked chana dal (without water) and malai. Mix well and knead stiff but smooth dough with enough water.

Rest for 15 minutes. Then knead well again and prepare equal size small balls from it. Take two plastic sheets. Apply oil on the surface of one sheet. Put a ball on it. Put another plastic sheet on it and press gently with the bottom of the small bowl or katori. Prepare as thin as possible. Put prepared thattai on cotton cloth. Prepare all thattai like this.

Make cut impressions with fork or knife on it's surface. Deep fry in hot oil till golden brown and crisp. Thattai is ready to serve.
