Prepare the ingredients.

Mix the chestnut flour with the water, whisking to avoid lumps. Add the salt, then fold in one third of the pine nuts and one third of the soaked raisins.

Grease the baking pan(s) with extra virgin olive oil. Pour in the batter and top with the remaining pine nuts, raisins, rosemary needles, and a light drizzle of extra virgin olive oil.

Bake at 350°F (180°C) for 30 minutes. The aroma will be amazing—this is an easy and delicious treat.
