Juicy Lemon Chicken in the Oven

The most classic and beloved Sunday meal for every family. We may search and try various gourmet dishes, but we still long for grandma's cooking! Loved by both young and old, it's easy, delicious, and quick.
An optional addition: Ten minutes before turning off the oven, add some cubes of kefalograviera cheese for extra flavor to our dish.
Juicy Lemon Chicken in the Oven

Cooking Instructions

Take the chicken out of the fridge half an hour before using it to bring it to room temperature.

Preheat the oven so it's ready when we put the baking dish in.

Place the potatoes in the baking dish and sprinkle with spices and herbs, salt, add half the olive oil and the juice of one lemon. Mix well with your hands and arrange the potatoes evenly, preferably in one layer.

In a large bowl, place the chicken (after washing it, even if some say it's not necessary). Sprinkle with spices and herbs, salt, add the remaining olive oil and the juice of the second lemon. Mix well with your hands and arrange the chicken over the potatoes.

Pour 1 cup of water at the edge of the baking dish and cover with aluminum foil. Bake at 350°F (180°C) covered for one hour, remove the foil and bake for another half hour or until the dish is ready and golden brown. Cooking times may vary depending on your oven.
