Firstly in warm water add little salt and turmeric powder mix well. Now put the Gobi florets Leave it for 15 mins. after wash with normal clean water. Then u can use it. In the mixing bowl add grated or grinded Gobi (without adding water) next add above mentioned kofta ingredients to it and mix well make a soft Dough As shown in the image. if needed sprinkle some water.

After wet your hands with some water and take small ball size mixture and shape it round like a kofta. Repeat this process to remaining mixture. Keep it aside.

Now Heat the oil in pan. Once oil is heat sufficiently. adjust the flame and deep fry the prepared koftas until they turns golden brown colour. Stir occasionally. Or alternatively you can use appam tawa, flip and roast both sides to using little oil or shallow fry. Leave it aside.

For the rice:- firstly take the rice wash completely, add enough water to it. Cover and rest it for half an hour. Keep aside.

Now heat the ghee in a pressure cooker, and add Shahi jeera, cardamom, star anise, bay leaf, cinnamon, cloves, black pepper, saute for few seconds.

After take the soaked rice and drain it well. Then add to cooker saute again for a minute. Now add required water to it.

Cover & boil until it becomes 75% cook, in pressure cooker cook for 2 whistle, then cool it completely,

In the deep heavy bottom pan add little Ghee, place the fried kofta's layer, next add rice then sprinkle some saffron milk and chopped coriander leaves, fried onions, make this type layer by layer how much you want,

Remember Last top layer comes with rice, then cover the lid and simmer 5 mins in low flame.

Finally serve hot, yammilicious cauliflower koftas birayani is ready. Serve it with raita, curd, sambar as you wish.
