Assamese Mohura Pitha

RiceDumplings Recipe-Assam is one of the North Eastern States.I am presenting here one of the Assam's popular Pitha recipe called Mohura Pitha.Pitha is a delicious rice cake.The shape of this Pitha is like the spindle used in weaving & so the name Mohura Pitha.
I used here rice flour to make this Pitha.The festival of Bihu in Assam is more on celebrating the art of making Pithas.The process is mostly steaming.In steaming process food prepared with zero oil.They tastes delicious.

To begin making the Mohura Pitha or sweet rice dumplings recipe, we will first prepare the stuffing.

On a frying pan add grated coconut,jaggery & cook on medium flame.Stir & fry till it becomes a little dry.

Add the cinnamon & pepper powder.Cool the mixture well & keep aside.

Now we will make the dumplings.Boil 2 cups of water in a heavy bottomed kadai.

Take 2tbsp of water in a bowl,add 1 tsp of rice flour powder to it & make a thick solution.

Add this solution to boiling water.Add salt, remaining rice flour at once & stir it continuously at medium flame for 2-3 mints.

Switch off the flame & cover the kadai with a lid.Let it sit for 10 mints.

Once cooled,start kneading the mixture to form a dough.It should be soft.

Make small balls.Take a ball in your palm & press with your finger tip at centre & make a hole in to it to pour the filling.

Stuff the balls with prepared coconut mixture.Close it properly with wet fingers & give the perfect shape.Desighed the sides of the Pithas with a fork.

Cook these Pithas in a steamer for 10 mints.

Cool it & enjoy the Mohura Pithas or sweet rice dumplings.
