Kesar Khirer Sandesh (without sugar)

Khirer Sandesh is a traditional Bengali sweet in which the whole milk is cooked for long in low flame and added sugar in that helps in getting a cake-like texture which later gets semi-solid (not too solid as whole milk is used), thus khirer Sandesh is made. It's a must in Bengali puja bhog recipes for so many Bengali families. And the another specialty of this sweet is Sandesh Mould or Sandesh Chhanch. And about recipe, I have tried this recipe in a different way and it came out very well too. My version is a shortcut version of traditional khirer sandesh and has no refined sugar in it and the flavour of saffron is the lead. So here is my khirer sandesh recipe..

In a non-stick pan add raw milk, heat it a little bit then switch off the flame and add Saffron into it cover and rest 5 mins.

Then into that saffron milk add ghee, milk powder and again switch on the flame on low and keep stirring it for 1-2 mins.

Into this mixture now add cardamom powder, rock sugar powder. Keep stirring it until it becomes like a dough almost.

Now switch off the flame and transfer the mixture in a greased plate otherwise it will get overcooked. Now, wait for sometimes until it comes in handleable temperature.

Now grease a sandesh mould or sandesh chhanch with ghee and then take parts from the mixture and place it on the sandesh mould and press it lightly. Once the sandesh holds the shape of mould take it out.

And the kesar khirer sandesh is ready.
