These are like taquitos but baked not fried. I used large flour tortillas, you can easily use corn or smaller size as you prefer. I prefer to make then filling one day then baked flautas as i eat them all week. Can also bake all then reheat the leftovers or eat cold. Do not advise to freeze after cooking.
Suggest to serve with guacamole or salsa and yellow rice or citrus cabbage slaw. Great with beers or margs!!

Ingredients

12 servings
  1. 1 cupcooked black beans
  2. 2roasted poblano peppers
  3. 1cob of corn
  4. 1/2sweet onion
  5. 1/4tspn cumin
  6. 2 tbspchili powder
  7. 2 tbspgarlic salt
  8. 3 clovesgarlic
  9. 12tortillas

Cooking Instructions

    Sweat onion on med high in sausepan for 5 minutes then toss in garlic, cumin, chili powder and remove from heat.

    Mash beans and peppers together in large bowl

  3. 3

    Cut corn from cob.

  4. 4

    Mix peppers, beans, onions, and corn.

  5. 5

    Cook tortillas, on grill or bake for 2 min each side

  6. 6

    2 tbsp filling for each tortilla and roll loosey. (good to use some filling to keep it closed)

    Arrange on cookie sheet with seam side down and cook for 20 minutes at 350
