Ingredients

  1. 4eggs
  2. 1spring onion, chopped
  3. 1/4pepper, chopped
  4. 1 clovegarlic, chopped
  5. 2 tbspsolive oil
  6. A fewdrops of truffle oil (optional)
  7. 1 tablespooncream cheese
  8. Spices
  9. 1 pinchcumin
  10. 1 pinchground cinnamon
  11. 1 pinchallspice
  12. 1 pinchpaprika
  13. 1 pinchItalian herbs
  14. Salt and black pepper
  15. Topping
  16. Grated parmesan cheese

Cooking Instructions

    Put the olive oil with the truffle oil in a saucepan then start frying all the vegetables on a medium heat.

    📌📌 I used a medium size saucepan to get a thick omelette

  3. 3

    In a deep bowl, mix the eggs with the cream cheese and all the spices (leave the black pepper for the top)

    When the vegetables are cooked, spread them evenly in the saucepan then pour the eggs on them. Cover with a lid and leave on a ~medium to low heat for 8-10 minutes

  5. 5

    After 8-10 minutes turn the heat off, add the grated cheese on top of the omelette with the black pepper then cover again for 2 minutes.

    Prepare your toasted bread and butter but make sure you don’t burn it 🙃😢
