Ingredients

  • 10-12green chillies (or as per taste)
  • 15basil leaves
  • 2 teaspoonslemon zest (preferably green lime)
  • 2 teaspoonschopped coriander roots
  • 2 tablespoonschopped lemon grass(only the bottom part)
  • 1 tablespoonchopped galangal (Thai ginger)
  • 3 tablespoonschopped shallots (small onion)
  • 2 tablespoonschopped garlic
  • 1 teaspoonwhole cumin
  • 2 teaspoonswhole coriander seeds
  • to tasteSalt
  • 1fourth teaspoon white pepper powder
  • 1 cupcooked rice. Each grain should be separate
  • 2 tablespoonsoil
  • 3 clovesgarlic minced
  • 2bulbs spring onion whites
  • 2-3 tablespoonscoconut milk
  • 1/2green capsicum chopped
  • 2baby corn chopped
  • 1green tomato chopped

    Blend all the paste ingredients with very little water.

    Heat two tablespoons oil in a wok. Add chopped garlic, when pink add chopped spring onion, add salt to taste, two to two and a half tablespoons of green curry paste,, saute add coconut milk and cook till the gravy thickens slightly. Now add chopped vegetables, saute for a minute, then add cooked rice. Give a quick stir on high flame. Serve hot garnished with spring onion greens and lemon slices.
