Mix the soy sauce, honey, ginger, lemon juice, and black pepper. Use this mixture to marinate the chicken pieces. Place everything in a dish or a sealed zip-top bag. Let it marinate in the refrigerator for 8 hours to absorb all the flavors.

Place the chicken in the Crockpot slow cooker. Do not add the leftover marinade liquid, or the dish will be too watery. Sprinkle the cornstarch over the chicken to help thicken the sauce later. Do not add salt, as the marinade already contains plenty of salty soy sauce. Close the lid and cook on HIGH for 3 hours.

After 3 hours, transfer the chicken to a serving dish. Pour all the sauce into a small saucepan and bring to a simmer on the stove to reduce the sauce for a few minutes. If you need to thicken it more, add another teaspoon of cornstarch dissolved in a little cold water. Stir until the sauce thickens.

Serve the chicken with some sauce spooned over the top and garnish with thin slices of green onion (scallion).
