Steps

Add oil in a pan and heat it up for few seconds then add in your onion rings. Fry until golden brown. Remove and set aside

As the onions fry, soak the cubed potatoes in water that has yellow food colouring
- 3
Add in the soaked potatoes in the same frying oil and let them cook till crunchy on the outside and not over cooked on the inside. Remove and set aside.

In a sufuria or cooking pan add in your crushed ginger and garlic with oil and fry. Add in whole cardamom and cloves and let them fry together. Once golden brown, remove your whole spices.

Add your green and yellow hoho (bell pepper) and let it cook for 2-3 minutes

Add in the pre-boiled meat. You can pre-boil with ginger, garlic and cloves with water.

Next add in your spices to make the rojo. Add in cumin, black pepper, cardamom powder, cinnamon, garam masala, curry powder, salt and pilau masala. The pilau masala is optional. Mix the meat and spices together and let them cook for 2 minutes.

Add in your blended tomatoes and tomato paste. Mix together. Let it simmer for 2-3 minutes.

Next, add in your maziwa mala. Then add in your fried potatoes and onions. Cover and let it cook for 10 minutes.

Next add in your lime, mix and let it cook until you see a layer of oil forming on top. The rojo will be ready.

For the rice, cook the rice as you normally would cook it. Then pour in the remaining food colour and mix the rice to form an ombre kind of look.

If you find it being too acidic, add a little bit of sugar to reduce the acidity.
