You can use whichever vegetables you so wish to use. For this you can use frozen peas and carrots instead of the bell peppers. You may also add the yellow bell pepper but I didn't have one so I opted to use carrots, red and green peppers to help bring out more color. #creativerice

Prepare your ingredients

Heat oil in a pan and throw in your onions. Wait for them to cook and add in your garlic ginger paste. Cook until fragrant.

Add in your carrots and bell peppers, stir and let it simmer for about 5 minutes. Season with salt and a little soy sauce.

Pour in your leftover rice and mix. Leftover rice is better to use cause it's usually grainy (imeachana) compared to rice that has just been cooked.

Add more soy sauce if you want your rice to have more colour.
