Ingredients

Serves 4 servings
  1. 2 tablespoonsbrown sugar (about 25 grams)
  2. 1/4 cupwater (about 68 grams)
  3. 3/4 cuptapioca starch (about 85 grams)
  4. 8 cupsboiling water for cooking boba
  5. 1 cupmilk
  6. For the brown sugar syrup:
  7. 3 tablespoonsbrown sugar (about 40 grams)
  8. 3 1/3 tablespoonswater (about 50 grams)

    Combine 2 tablespoons of brown sugar with 1/4 cup of water in a small pot. Cook over low heat until the sugar dissolves.

    Add the tapioca starch and mix with a spoon until combined. Turn off the heat and transfer the mixture to a surface dusted with tapioca starch. Knead into a dough, roll into long strips, cut into desired sizes, and roll into balls to form boba.

    Bring a pot of water to a boil and add the boba balls. Cook until they float to the surface.
