During the pandemic, I watched a video of a popular influencer making brown sugar boba at home. It looked easy, but when I tried it myself, I realized it was quite challenging (I secretly threw away the first batch; this is the second one). Later, I enlisted some help, and with four hands working quickly, we rolled the dough into balls before it cooled down. After finishing, I had only one thought: next time I want brown sugar boba, I'll just buy it from a bubble tea shop!

Ingredients

Yields about 340 g
  1. Boba Ingredients
  2. 80 gbrown sugar
  3. 90 gwater
  4. 150 gtapioca starch
  5. Brown Sugar Syrup
  6. 100 gbrown sugar
  7. 350 gwater

Cooking Instructions

    Combine brown sugar and water in a pot on the stove. Stir over low heat until dissolved, then increase to high heat and bring to a boil. Remove from heat and gradually mix in the tapioca starch while stirring.

    Flatten the dough, cut it into strips, then into small pieces, and roll into balls. Dust with a little dry starch. Once all are shaped, sift to remove excess starch and cook them.

    In a pot, bring 10 times the amount of water to a boil. Add the boba and stir with a spoon to prevent sticking. Cover and simmer on low heat for 20 minutes, then turn off the heat, drain, and place in ice water.

    Boil the brown sugar syrup, add the chilled boba, and bring to a boil again. Reduce to medium-low heat, cover, and cook for another 20 minutes, stirring occasionally to prevent sticking. Turn off the heat and let it sit covered for 15 minutes before uncovering.

    Find a clear glass, add some brown sugar boba, swirl the syrup around the inside of the glass, then add ice and fresh milk. Your delicious brown sugar boba milk is ready!
