Ingredients

Serves 4 servings
  1. Brown sugar pearls (tapioca starch: brown sugar: water = 2:1:1)
  2. 150 gramstapioca starch
  3. 75 gramsbrown sugar
  4. 75 gramswater
  5. Brown sugar syrup
  6. Prepared brown sugar pearls
  7. 1 tablespoonbrown sugar

Cooking Instructions

    Boil the brown sugar and water together until mixed.

    Add the tapioca starch to the hot brown sugar water and knead into a dough. (The brown sugar water is hot, so work quickly!)

    Cut the dough into sections, roll into thin strips, and cut into small pieces about 1 cm each. Roll into balls (or leave as is).

    Fill a pot with water to about 80% full. Once boiling, add the prepared pearls. Stir to prevent sticking to the bottom. Cook for 20 minutes, then turn off the heat and let sit for about 10 minutes. Scoop out the pearls into another pot (or drain excess water), add 1 tablespoon of brown sugar, and stir until dissolved. Let cool for later use.
