Cooking Instructions

Mix brown sugar and water.

Heat in a pot over high heat.

Once boiling, reduce to low heat and quickly stir in tapioca starch to form a dough. Remove from heat once it forms a ball.

Knead the dough by hand until smooth (like washing clothes).

Divide the dough and cut into small pieces. Don't make them too big, as they will expand when cooked (wrap unused dough in plastic wrap to prevent drying).

Roll into balls, using a little tapioca starch to prevent sticking (if not using immediately, freeze them).

Cooking the pearls: Use a ratio of 1 part pearls to 10 parts water. Ensure there's enough water to prevent drying out.

Bring water to a boil and add the pearls.

Once all the pearls float, cover the pot and simmer over medium heat for 20-25 minutes (depending on the size and quantity of pearls).

Turn off the heat and let them sit for 20 minutes.

After resting, soak in cold water (this makes them chewy).

Brown Sugar Syrup:
Boil brown sugar with a little water, then turn off the heat (less water makes it thicker and sweeter). - 13
Remove pearls from cold water and mix evenly with the brown sugar syrup.

Place pearls in a cup, swirling them around the edge.

Add fresh milk to finish. I used less brown sugar syrup, so the color is lighter.
