Fried Fish on a Disc

This is one of my favorite ways to enjoy fish. I used to eat up to 10 of them—it was a lot, but I did it! My dad would go fishing, and this was one of his favorite meals. He would bring back plenty, and later we would buy them. It's a great dish to share with family, whether you're having a picnic or eating at home.

Wash the fish thoroughly and make diagonal cuts on each one.

Rub lime juice on both sides of the fish. Add plenty of garlic, onion powder, and salt. If you like, add pepper as well.

Let the fish marinate for at least 30 minutes.

Pour the oil into a large disc-shaped pan and heat it over a torch or wood fire. Once the oil is hot and bubbling, carefully place the fish in the oil (about 3 or 4 at a time, depending on the size of your pan). Fry and turn the fish so they cook evenly on both sides. Remove the fish with kitchen tongs, shake off excess oil, and place them on a tray lined with paper towels to absorb any remaining oil.

Serve and enjoy with guacamole and salad.
