Ingredients

  • 13-4 lb chicken cut into 8-10 pieces or chicken parts
  • 2 stalkssliced Celery
  • 1 cupsliced Onion
  • 2large peeled Diced Potatoes (Golden Idaho)
  • 1 tblwhole All Spice
  • 4Bay Leaves
  • 2 clovesGarlic
  • Pepper
  • 2Limes
  • 1 tblSea Salt
  • Vinegar

Steps

  1. 1

    Soak wings in vinegar and water for 10 mins. Rinse

  2. 2

    Add chicken, celery, onion, all spice, bay leaves, garlic, goat pepper, salt to a large pot

  3. 3

    Add 2 cups water and boil for 15 mins

  4. 4

    Add potatoes and 6 cups water. Cover and cook for 40 mins on medium heat

  5. 5

    Spoon fat off the surface. Use spoon to break apart chicken legs. Add additional salt and lime to taste
