Makes 30 croissants
  1. For the dough:
  2. 4 cupsall-purpose flour (about 500 grams)
  3. 1large egg
  4. 1 tablespoonactive dry yeast
  5. 1 packetbaking powder
  6. 1 cupcold margarine (about 250 grams), for pastry
  7. 2 tablespoonsgranulated sugar
  8. Pinchsalt
  9. Warm water
  10. For the filling:
  11. 1egg yolk

    In a bowl, combine the flour, sugar, baking powder, and yeast. Mix, then add the salt, egg, and warm water. Knead the dough for 5 minutes.

    Roll the dough out on a floured surface into a square. Grate the cold margarine evenly over the dough. Gently roll up the dough. Roll it out again into a square. Fold the dough into thirds, then roll it out into a square again. Fold into thirds once more. Place in the refrigerator for 1 hour.

    Roll out the dough and cut it into triangles. With a knife, make a small slit at the base of each triangle, then roll up to form croissants. Let rise until doubled in size. Brush with the egg yolk. Bake at 400°F (200°C) for 30 minutes.
