Spicy Southwest Style Chicken Strips

Ingredients

  1. 1large pack chicken breast (cut into strips)
  2. Olive oil (enough to coat pan)
  3. 1 tablespoonchili powder
  4. 1/4 teaspoonground cumin
  5. 1/8 teaspoonblack pepper
  6. 6 clovesgarlic, minced
  7. 1 canBush’s black bean fiesta, undrained (or 1 can regular black beans, undrained)
  8. 1 cupfrozen whole kernel corn
  9. 2 jars (16 ounce)Salsa
  10. White rice, cooked
  11. Sharp cheddar cheese, shredded

Cooking Instructions

    Rinse, pat dry chicken breast, then cut into strips......

  2. 2

    Heat olive oil in a large pot or pan.....

  3. 3

    Place chicken strips into heated oil in pan......

  4. 4

    Season strips with chili powder, ground cumin,black pepper and minced garlic, sauté for several minutes......

  5. 5

    Next add into pot your can of black beans, corn and salsa, heat until boiling, then lower heat and continue to cook uncovered for 20 more minutes.......

  6. 6

    Serve spicy chicken over white rice topped with shredded cheddar cheese and enjoy 😉!
