First grease the tin with oil and set aside.

Take a bowl and add suji.

Add curd in suji.

Add oil and ginger chilli paste.

Add salt to taste. Mix well.

Add powder sugar in it.

Add little water and make a smooth batter.

Rest the batter for 10-15 minutes. Meanwhile, heat the steamer and add 2 glasses of water in it and put a stand. Bring to boil water.

After 15 minutes suji observe all the moisture, so add little water and make smooth batter.

When water heat enough. At last we add eno in suji better and add 1 tso water on it so eno activate properly.

Keep this process very fast and direct pour this mixture on tin and put tin in steamer.

Steam it for 15-20 minutes on low medium flame.

After 15 minutes check out the dhokla.

Check dhokla using knife. Insert knife if it comes clean so out dhokla is perfect. So here my knife is clean.

Take out dhokla from steamer and cool down for 5 minutes. Then cut out dhokla.

For tempering take a vessel and add oil in it.

When oil gets hot enough then add mustard seeds, white sesame seeds and hing.

Then add curry leaves and green chillies. Cook for a while.

Now switch off the flame and pour tempering on sliced dhokla and garnish with coriander.

So our soft spongy dhokla is ready to serve, look at this softness.
