This Roasted Carrot Soup is healthy, vegan, gluten free, and loaded with vitamins and minerals. A tablespoon of ginger gives a nice, throat-warming heat to this soup.

In a bake dish spread the sliced vegetables. Grease the vegetables with olive oil. Bake the vegetables at least for 20 minutes on 180 degrees C.

Let the vegetables rest sometime, after that blend it in a smooth mixture. You can strain the mixture (optional).

Take a pan add the strained mixture, add vegetable stock and salt, let it cook for 4 minutes. Serve in a bowl by garnishing it with fresh mint leaves, pepper and cream.
