Wash and clean and drain water from all the vegetables. And cut them in dices and finely chop as mentioned above.

Now take a deep pan and add oil. Add cumin seeds and let it crackle. Now add all the vegetables in the pan and cover it for 5 to 10 minutes. Let it simmer. Do not add spinach and fenugreek leaves. They must be added at last.

Now add ginger garlic paste and all the powder masalas and cover. Let the vegetables again cook for some more 10 minutes. All the vegetables should cook properly in their own steam.

Now add the spinach and fenugreek leaves and mix well with the vegetables. Now for some time without covering. Mix vegetable is ready to be served.
