Boil the potatoes, peel and mash them. Add all the ingredients along with finely chopped spring onion and coriander and mix well. Let it cool

Mix the milk and water and make it lukewarm. Mix both the flour in a bowl, add salt and ghee and crumble it with your hands with the flour. Now add the milky water mixture slowly and knead the dough. Dough should be soft. Add a grease of oil once done and leave it for rest for 20 minutes. Again i prefer making the dough as well a day prior even for ease.

Make small balls, flatten them and roll them. Add the filling, make sure to leave the sides empty. Then wrap the paratha as shown in the pics.

Then roll it again with a soft hand.

Now cook on tawa and fry it from both sode. Aloo paratha are ready. Serve it woth half fry egg and green chutney.
