Soak the dried pho noodles in water, then boil them in water with a little oil added (to keep the noodles from sticking together).

Simmer the chicken bones to make broth. Soak the cauliflower in salted water, rinse well, then add to the simmering broth and cook until the cauliflower is tender.

Finely chop the green onion and cilantro. Steam the chicken thigh with ginger until cooked, then cut into pieces.

Place the cooked pho noodles in a bowl, top with chicken, cauliflower, green onion, and cilantro, then pour the hot chicken broth over everything. Serve for your child.
