Spaghetti aglio olio e peperoncino with a twist

Here in Italy it's common to have pasta sauces without tomatoes, this kind of sauce is called 'in bianco', literal translation is in white. To make it work you just need a good quality extra virgin olive oil. This is similar to one or two recipes I've shared but in bianco. Bring pot of salted water to the boil and cook pasta according to instructions. Remove flesh from the Langostine tails keep four whole for decoration. Cook garlic and chill in a good amount of olive oil

After a couple of minutes, add the whole Langostines. Continue cooking for another min or two on medium high heat. Then add the tails and a Glug of white wine. Let it evaporate

Remove whole Langostines and set a side. Remove garlic. Drain pasta al dente. Then add pasta to sauce and cook on medium for 1 min. Serve with fresh parsley, a drizzle of olive oil and the Langostine on top 😍
