Ingredients

Serves 4 servings
  • 3ripe bananas (any variety, such as Cavendish or apple bananas)
  • 2large eggs
  • 5 1/2 tablespoonsunsalted butter (80 grams)
  • 1 1/2 tablespoonssweetened condensed milk (20 grams)
  • 1/4 cupsugar (60 grams)
  • 3/4 cupall-purpose flour (100 grams)
  • 2/3 cupraisins or other dried fruit or nuts of your choice (100 grams; adjust amount as desired)
  • 1/4 teaspoonbaking soda
  • 1/4 teaspoonground cinnamon (or substitute with instant coffee powder for a different flavor)
  • 1 pinchsalt
  • 14x8 inch loaf pan

    Preheat the oven to 300°F (150°C).

    Line the loaf pan with parchment paper, or grease it with butter and dust with flour to prevent sticking.

    Peel the ripe bananas, place them in a bowl, and mash well. Add the sugar and sweetened condensed milk, and mix until combined.

    Place the butter in a microwave-safe glass or ceramic bowl (avoid plastic for health reasons) and microwave for 40 seconds until melted.

    Beat the eggs, add the melted butter, and pour into the banana mixture. Mix well.

  6. 6

    In a separate bowl, combine the flour, baking soda, cinnamon, and salt. Sift this mixture into the banana bowl to prevent lumps. Add the raisins or other dried fruit or nuts, and mix until just combined.

    Pour the batter into the prepared loaf pan. Bake for 50-60 minutes. After about 30 minutes, check if the top is browning too quickly; if so, cover loosely with a piece of aluminum foil to prevent burning. To check for doneness, insert a toothpick into the center—if it comes out clean, the bread is done.

    All done! Enjoy your banana bread with tea. It’s delicious warm or cold, but I prefer it chilled for a cool, sweet treat—perfect with a hot cup of tea. Great for breakfast or as a snack!
