Measure your dry ingredients, and mix them in a bowl. Add the lemon zest and Use a fork to aerate the mixture

Using your hands, add in the margarine /butter and mix well to get a sandy texture

Make a hole at the center and and the vanilla essence and the milk little by little till you get a soft and stretchy dough.

Grease the dough lightly with some oil and cover it with a warm kitchen towel for at least 20 minutes

Divide your dough into small balls and keep them covered to stop them from drying out (I made 5 balls). Roll each of them out, divide into quarters and deep fry the pieces till golden brown.. Enjoy your lemon mandazis with some hot masala tea!!
